Mom's Fudge makes Friday Fantastic

I probably should have shared this on Friday.  But sharing on Tuesday means that you have the week to think about it and make sure you have all the key ingredients.

We love my mom's fudge with popcorn.  Course it's amazing entirely on it's own.  But be warned. . .it is incredibly rich.

4 c sugar
1-2 tbsp cocoa
1 1/2 c milk
4 tbsp butter
2 tsp vanilla.

Mix the sugar and cocoa in a large pan.  Stir in the milk.  Cook over medium heat to "soft ball stage" (which is about 240 degrees F)  To test you can drizzle a teaspoon or so of the chocolately mixture into 1/3 c of cold water.  If it will take shape as a ball, it's ready to move onto the next step.

Once you read soft ball stage you remove from the heat and add butter and vanilla.  the beat with a mix master on high until the mixture begins to look dull.  This will take just a few minutes. 

Pour into a buttered platter and let set.  After about 10 minutes you should cut it into pieces using a sharp knife.  If you wait too long, it will be too hard to cut.

This is a hard fudge, not to be confused with a softer fudge.  This one will melt in your mouth and is so rich that you should plan to have it with something nice and salty.
